Parmesan Herbed Chicken

4 Organic boneless skinless chicken breasts

1/2 cup of good quality grated parmesan cheese

1 sprig of fresh rosemary chopped fine

1 tblsp dried basil and oregano

1 tsp salt

1 tsp ground pepper

1 tblsp extra virgin olive oil

Preheat oven to 350 degrees.  Mix all dry ingredients together into a medium size bowl.  Pat chicken breasts dry.    Prepare a pryex dish witaeese/herb mixture and coat completely.  Place into prepared pyrex dish and place into oven for 40-45 minutes.

Enjoy with a side dish of wild rice, cous cous, quinoa or whole wheat pasta.

Veggie side dish could be steamed asparagus, sauteed zuccini’s and red peppers, steamed broccoli etc.
