Oatmeal Raisin Cookies – Gluten Free
What is life without enjoying a yummy homemade cookie every once in a while? I know you will love this recipe and can feel confident giving these to your family knowing that you are giving them a healthier treat.
Preheat oven to 300 degrees.
1 cup of oat bran
1 cup of ground almonds or almond meal (TJ’s has this)
1 cup of oats
1/2 tsp of baking soda
1/2 cup of brown sugar
1 cup of unsweetened applesauce
2 Tbsp. honey
2 tsp vanilla extract
1/2 cup salted butter – 1 stick room temperature
2 large eggs – organic if possible
1 cup of raisins
1/2 cup of pecans or walnuts chopped – optional
In a medium bowl, combine oat bran, almond meal, baking soda and oats.
In a large bowl, blend sugars with electric mixer set at medium speed. Add butter and mix to form a grainy paste. Scrape down sides of bowl, then add honey, vanilla and eggs. Mix at medium speed until light and fluffy.
Add the dry ingredients, raisins (nuts optional) and blend at low speed just until combined. Do not overmix.
Drop by rounded tablespoons onto greased cookie sheet, 1 1/2 inches apart. Bake for 22-24 minutes or until cookies are light golden brown. Immediately transfer cookies with spatula to a cool flat surface.
