High fiber muffin recipes

Here are the base ingredients for all of the muffins I make.  I will include ideas for how to change it up and experiment too!  These muffins are high in fiber and protein and are a great breakfast on the go – just ask my husband and kids! 🙂

Preheat oven to 350 degrees.  Prepare muffin pan with a little olive oil spread in each muffin tin.

1 large organic free range egg

3 -4 tablespoons of organic salted butter or coconut oil

1 cup of organic no sugar applesauce

2-4 bananas – depending on which muffins you’ll make

1/2 cup of good quality whole wheat flour – like Bob’s Red Mill

1/2 cup of oat bran – can also use steel cut oats!

1/2 cup of ground flaxseed

1/2 cup of almond flour

1 tablespoon of baking powder

1 tsp of baking soda

1/2 tsp sea salt

You will need one large bowl and a fork.  Melt butter and add to bowl.  Mix in wet ingredients first, followed by all dry ingredients.  The key is to not over mix!  Once you can’t see the dry ingredients, stop mixing.  You want the batter to look very moist and lumpy with ingredients.

Bake on 350 for 18-22 minutes depending on the recipe.  Make sure muffins are spongy to the touch and your knife comes out barely clean when testing for doneness.  Let cool for 5-10 minutes and enjoy!  They also freeze beautifully too.

For Blueberry Muffins:  add 1 cup of organic blueberries and 1 lemon squeezed to wet batter.  Add 2 or 3 bananas mashed.  Zest the lemon into the batter.  Muffins will take closer to 22 minutes to bake.

For Zucchini Muffins: Add 2 cups of grated zucchini, 1/2 cup of raisins, 1 tblsp cinnamon. 22-24 minutes to bake.

Pumpkin Spice Muffins.  add 1 can of organic pumpkin to wet batter.  Add 2 tsp of cinnamon and a couple dashes of nutmeg to dry ingredients. Add 2 or 3 bananas.  Muffins should take about 20-23 minutes to bake.

 

 

 

 

 

 

 

Apple Spice Muffins:  Add 1 chopped organic apple to wet ingredients.  Add 2 to 3 mashed bananas.  Add 1/2 cup of raisins.  Add 1-2 tsp cinnamon and a dash of nutmeg.  Muffins should take 20-22 minutes to bake.

Banana Muffins:  Add 3-4 very ripe bananas to wet batter.  Spices are optional depending on your tastes.    Muffins should take 18-20 minutes to bake.

Try experimenting with different combos and let me know how it turned out! I love making home made muffins and my family loves the warm and inviting smell throughout the house too!  They are great to serve to company coming over for tea or coffee.
